Poisson au Fromage

Sounds better than ‘fish with cheese’, doesn’t it?  This is delicious and easy to throw together; additionally it’s a great dish to try to encourage non fish-eaters to come on over to our side.

1 lb of fresh or defrosted white fish (sole, basa, tilapia, haddock…)
Seasoned bread crumbs to coat
2 T mayonnaise
2 T Dijon mustard
¼ t garlic powder
¼ t dried oregano
1 t lemon juice
Freshly ground black pepper
½ c grated cheddar cheese
Paprika

Preheat oven to 400o.

Dry the fish well with paper towel, and dip in breadcrumbs to coat.  Bake on a foil-lined cookie sheet on the lowest rack for 10 minutes.

In the meantime, assemble the sauce by combining the mayonnaise, Dijon, garlic, oregano, lemon juice and black pepper. 

At the end of the 10 minutes, remove the fish from the oven, and turn the oven on broil, moving a rack to the second-highest position.  Spread the fish evening with the sauce, and carefully sprinkle the cheese over the fish.  Sprinkle the cheese with paprika, and broil until the cheese is melted and beginning to brown.

I love rice with fish, but this also works well with boiled new potatoes.

  1. Yes fish with cheese does sound boring. This on the other hand looks and sounds delicious. The French certainly know how to make food sound beautiful. B
