My Go-To Brunch Sandwich

I often make this for myself on a Saturday; one of my all-time favourites.  Admittedly, not to everyone's taste, but it suits mine just fine!

2 slices toast, buttered
1 slice processed cheese (horror of horrors!)
1 fried egg, cooked to your liking
Tomato slices
Dill pickle slices

Put cheese on buttered side of the bottom slice of bread.  Top with hot fried egg, followed by tomato, pickle, and the other slice.  Heaven at 11 a.m.

Ham Baked Eggs

A great solution when you want to put some pork on your fork for breakfast, without dirtying a pot or a pan.

For each serving:
3 thin slices ham or smoked turkey lunch meat (I use Piller’s)
2 eggs
1 T cream or milk
Salt & pepper
Fresh chopped herbs (optional)
Paprika

Preheat your oven or toaster oven to 325o. 

Line the bottom and sides of a ramekin or other ovenproof single-serving dish with the ham slices.  Break the eggs into the dish, and add the cream over the eggs (don’t stir).  Season as desired, and finish by sprinkling with paprika.   

Bake for approximately 15 minutes, just until set (the very middle should still have a little wiggle to it). 

Serve in the dish, along with toast.

Sunday Breakfast!

I always like to make something a bit special for Sunday breakfast.  Last Sunday's was poached eggs on toast with bacon.   A bit of ketchup or chili sauce on the side, and a mug of tea or coffee, and life is pretty sweet.  Now...what to make for this Sunday?
