Cannellini Burgers

Cannellini are just white kidney beans, but cannellini sounds nicer and is fun to say.  Cannellini!

1 540ml/19 oz can cannellini beans, drained and rinsed
1 T lemon juice
1 egg
½ t turmeric
½ t cumin
1 t coriander
1/8 t cayenne pepper
¼ t salt
Freshly ground black pepper to taste
2 cloves garlic, minced
1 green onion, cut in half lengthwise then finely sliced
¼ c dry bread crumbs
2 T minced parsley or cilantro

Combine the beans, lemon juice and egg in a food processor and blend until smooth.  Scrape into bowl, and add remaining ingredients.  Mix with hands, cover with plastic wrap, and refrigerate until ready to use.

Shape into two large patties or four smaller ones.  Preheat 1 T oil in a frying pan over medium heat until hot.  Add patties, lower heat to medium low, and fry until golden, approx. seven minutes.  Turn over and cook for another seven minutes.   

Serve these on pitas or buns with tzatziki or tahini, and garish with your choice of
cucumber, grated carrots, tomatoes, onions, alfalfa sprouts and hot peppers.

Serves 2.
