Slow-Roasted Turkey Thighs

This is one of my regular weekend go-to's.  These require a three hour roast, but the end result is mouth-watering; crispy-skinned, with a moist, fall-off-the-bone interior.  I generally use brand-name (ie Prime) turkey thighs when making these; they tend to have better flavour and less fat than others.

2 turkey thighs
Olive oil
Coarse salt & freshly ground black pepper to taste

Preheat the oven to 300 degrees.  Rub the turkey with oil, then sprinkle with salt and pepper on both sides.  Place them skin-side-up in a shallow roasting pan with a rack.  Bake for one hour, then remove from the oven, turn skin-side-down, and roast for another hour.  Remove from oven, turn skin-side-up, and place back in the oven for another hour.

Serve with whatever strikes your fancy, and enjoy.
