Based on the price we’re charged for fresh salmon, I usually
only make this with frozen. Still,
frozen salmon (particularly brand name) can be equally as tasty, especially
when done like this.
227 g / 8 oz frozen salmon fillets, thawed and finely minced
by hand
1 T finely chopped ginger
1 clove garlic, minced
1 green onion, finely sliced
1 t soy sauce
2 T minced cilantro
¼ c panko breadcrumbs
Freshly ground black pepper to taste
1 T vegetable oil
In a small bowl, combine everything but the vegetable
oil. Mix together well, cover with
plastic wrap, and refrigerate for 1 hour.
Preheat vegetable oil in a non-stick frying pan over
medium-low heat. Form mixture into two
patties. Once pan is hot, add
patties. Cook for five minutes per side,
or until browned and just cooked
through.
