An Onion-Lover's Saviour

Most of us, as we age, start having problems 'effectively' digesting raw onions.  To some, this would be no big deal; just avoid them.  To others, particularly those who wouldn't consider having a hot dog or hamburger without raw onion, it's a big deal.  Your enjoyment level is decreased; you miss that crunch and the taste, despite it's troublesome effects.  Occasionally you cave, but soon learn you can no longer live for the moment.

But alas, my raw onion-loving friends, there is a solution.  A solution which will still allow you to enjoy the crunch and the taste, without any of the ill-effects: citrus juice.

Any number of onions, cut any way you wish, and placed in a non-reactive bowl.  Add enough lemon or lime juice to cover.

Cover with plastic wrap, and marinate, refrigerated, for twelve hours.  Drain away juice, and blot the onions dry on a paper towel.  Use as you would raw onions, without the upset!!! Excellent on burgers, hot dogs, sandwiches, tacos...just about anything!
