Thin-Crust Spinach Pizza

This is my version of the frozen thin-crust spinach pizzas which have become quite popular. Homemade is far better, of course, and I think this works quite well.

Garlic Sauce
1 T butter
1 T flour
½ c milk
3 cloves garlic, minced
¼ c grated Parmesan
Ground pepper to taste
1/4 t dried basil
dash Tabasco

1 pkg. frozen spinach, thawed and well drained
Grated Parmesan to taste
Grated mozzarella to taste

First, make the garlic sauce. In small saucepan over medium heat, melt butter. Add flour and stir well to combine. Add milk, whisking occasionally until thickened. Remove from heat and add garlic, Parmesan and pepper. Cool, whisking occasionally to prevent skin from forming. Sauce will be fairly thick.

Preheat oven to 550o; spread pizza dough on pan. Cover dough evenly with the cooled garlic sauce, followed by the spinach, then the cheeses. Bake for 15 minutes on bottom rack, rotating halfway through cooking.
